LaRATTE
The LaRatte is a favorite of ours here at Healthway Farms. It is a crescent shaped fingerling that has a golden skin and a yellowish flesh. It is very smooth and velvety when pureed yet maintains a firm texture when roasted or boiled. It has a distinct nutty flavor that can be compared to that of a chestnut or hazelnut. BUTTERFINGER
The Butterfinger is a crescent shaped fingerling with a thin, smooth skin. It has a yellow flesh that maintains its color after cooking. Butterfingers contain higher starch content than most other fingerlings. This causes them to maintain a firm texture making it great for salads, soups, or sautéed in stir fries.
